Sweet Potato Crunch

Potato mixture:
  • 4 large sweet potatoes (or enough to make 3 1/3 cups of mashed potatoes)

  • 1 cup sugar

  • 1/3 cup melted butter

  • 1/4 cup milk

  • 1 teaspoon vanilla

  • 2 eggs



  • 1/3 cup melted butter

  • 1 cup brown sugar

  • 2 teaspoons flour

  • 1 cup pecans

  1. Peel and chop sweet potatoes.  Place in pot covered in cold water.

  2. Boil potatoes until just fork-tinder.

  3. Drain potatoes and transfer to a large mixing bowl.

  4. Using a hand mixer, mash potatoes just until a thick consistency (do not over-mix).

  5. Measure out 3 1/3 cups to another large mixing bowl, discarding remaining potatoes.

  6. Add the rest of the ingredients listed under "Potato Mixture" and lightly blend.

  7. Transfer the mixture to a medium sized baking dish and set aside.


  1. In a medium mixing bowl, combine all the ingredients listed under "Topping".

  2. Using a large fork, mix together the topping ingredients to make a crumble and pour over the sweet potato mixture.


350 degrees for approximately 1/2 hour
